Pioneer Day and other things...










This last week has been crazy as usual but at least we got a break in the middle. On the 24th was Pioneer Day and we were able to spend the day together as a family. We were rather lazy in the early part of the day - just hanging around the house and making a quick trip to Costco - but in the afternoon we took the kids and met all the grandparents over at West Jordan Park for a picnic and relaxing afternoon. It was so fun to just hang out and have fun as a family. The kids were able to play at the park, we played Bacci Ball, and basically we just spent time together. After the park we went home and did some fireworks with our neighbors. It was a great day!!






Now for those who are interested in the Co-op I talked about a few posts ago - way cool!!! Kate and I went to pick up the food today and can I say WOW! First of all - I could not believe how many people were there from all walks of life. The pick up started at 9:30 and the line was down the hall and around the corner before we got there at 9:25. They have several different options to choose from - thoush we chose the Standard Share for our family. For $46 (which is 2 shares at $23 a piece) we got 2lbs of salmon, 4 lbs of chicken, 2 lbs of hamburger, 2lbs of ribs, 4 mangos, 2 heads of romaine lettuce, 4 green peppers, 10 apricots, 10 peaches, 16oz of rice, 2 loafs of whole wheat bread (from Stone Ground - can you say yummy!!!), 2 heads of Califlower, 2 bags of carrots, and 6 ears of corn. We also bought 10 tamales for $5 extra!! Way cool!! What a great deal - everything is organic and is bought from local producers. The meat is actually from a real local butcher not from the supermarket. I think we will be doing this again. I was really impressed with the quality of food that was given for the price we paid.

20 year tag!

20 years ago....
1- I was 11
2- I was just getting ready to start the 6th grade
3- I had a really cute (but rather dumb!) dog names Muffin
4-I played Softball for the Red Devils....

10 years ago.....
1- I was getting ready to start my senior year at BYU
2- I was helping my bestfriend get ready for her wedding (I can't believe it has been 10 years)
3- I went to Florida with A"Lisha and Amy Byron (actually in September)
4 - I turned 21

5 years ago....
1- My Thomas had just turned 1
2- We were living in a nasty little house in South Jordan
3- I started my Masters Program at Utah State
4- I taught the Laurels in our South Jordan ward

3 years ago......
1- My little Kate was born
2- lived at my parents
3 - Moved from the worst apartments ever to be created (student housing - hence why we lived at my parents)
4- Became a supervisor at work.

1 year ago....
1- Was pregnant with Mattie
2- Was getting ready to send my husband off to the Army (not a great time for me!)
3- My honey came home from the army! (best day of my life!!)
4- Thomas played soccer for the first time (what a hoot!!)

So far this year I have...
1- Had my little Mattie
2- Gone on a trip to Montana
3- Been called to teach the 5 and 6 year olds in primary (heaven help!!!)
4- watched my children grow and become amazing little people

Yesterday I ....
1- Went to work
2- Talked to my friend Audrey who I haven't talked with in like 3 months!
3- Made awesome chicken enchiladas
4- Played outside with my kids

Today I ...
1- took my kids to their daycare
2- am at work
3- will be leaving work early
4- will make dinner again!!

Tomorrow I will...
1- Have fun with my family!!
2- avoid watching the parade on T.V. (can I tell you how much I hate parades!!)
3- watch fireworks
4- SLEEP IN!!

In the next year I will....
1- still be working (bummer!)
2- Go on a family vacation (not sure where)
3- Hopefully get new carpet!!
4- watch my children keep on growing!!!

New Pictures



'These are some pictures my dad found when he was cleaning out his camera. The first one is at Halloween (no duh!!) and the second one is Katie's dance recital. My kids are so dang cute!!! The new family picture (top right) was taken at Adam's wedding at Red Butte Garden. We couldn't get everyone cooperating at the same time - but it is still cute.

Some cool stuff!!

OK - so I received this email a couple of months ago from a lady at work and didn't think anything of it until the last couple of days. She was passing on information about something called a food "co-op". I was cleaning out my email box when I rediscovered this email. I looked into it a little bit more - and can I just say WOW!! For all of those out there who like a good deal and are into saving lots of money on groceries - check this out!

You place your order by the middle of the month and at the end of the month you go and pick up your food. They have different things available every month but it is all fresh and I pay about half the cost. The best part about it is that there is no income requirement and it is all run by volunteers. You have to agree to volunteer two hours a month doing anything (helping at the co-op, helping at your kids school, scouts, other church callings, etc..) and that is basically your payment for the service. Neat concept that has apparently been going on for some time. So... try it out and let me know what you think!

Also, I found a new great recipe for all of those who are not interested in heating up your kitchen. I saw this on Good Things Utah and thought I would give it a try. Everybody loved it!! - Including picky Thomas who even ate the burrito with lettuce. So here is the recipe (side note... Best place to buy rotisserie chicken is at Costco or Sam's club because it is the best price as well as I just used the cheapest BBQ sauce I found at the store - and it was great!) Also - it does feed more than 4 people as suggested as well as you can make it go further by adding more beans and corn - whatever suits your fancy!

South West BBQ Chicken Burritos
Ingredients
1 2-lbs. roasted chicken, skin discarded, meat removed from bones and shredded (4 cups)
½ cup prepared barbecue sauce
1 cup canned black beans, rinsed
½ cup frozen corn, thawed, or canned corn, drained
¼ cup reduced-fat sour cream
4 leaves romaine lettuce
4 10-inch whole-wheat tortillas2 limes, cut in wedges
Preparation:
1. Place a large nonstick skillet over medium-high heat. Add chicken, barbecue sauce, beans, corn and sour cream; stir to combine. Cook until hot, 4 to 5 minutes.
2. Assemble the wraps by placing a lettuce leaf in the center of each tortilla and topping with one-fourth of the chicken mixture; roll as you would a burrito. Slice in half diagonally and serve warm, with lime wedges and a side of coleslaw.
Serves 4.
